    Korean Cooking

    With all my time off, I have taken up extravagant cooking in addition to all my other extracurricular activities.
    A night of Korean

    Tonight, I did Korean. Bibim Bap to be specific. I made Kimchi earlier in the week - which was fun. A little tricky - I'll have to edit my recipe for next time. But I will definitely make it again.

    To the Top

    My mom and I hiked the Royal Arch today. It's a classic Boulder hike, and yet, one neither of us have done (I am making headway on ticking off everything on that list - I will be doing the Bolder Boulder this year).

    Anyway, David had hiked this several times, mostly in the dark. Yes. It's a killer place to watch the sun rise. It's also a killer hike. It's only a mile, but it has an altitude gain of 1200ft. And since we did it in January, there was a lot of ice on the trail - for added challenge you know. I am not ashamed to admit I came down a significant part of the trail on my butt. It may have been a Tuesday, but we passed at least 20-25 people doing the hike. 3 of them were running. One of the runners had a killer pair of shoes... I never found out what they were...
    Anyway, we're planning for next Tuesday - I found a nice 3.5 mile hike in south Boulder. The book says there is an altitude gain of 3000 ft. Watch me kill it.

    Fancy Cheese Me, Please

    It's 2am. 2:11 to be exact.

    And the club across the street is thumpin' like there's no tomorrow.

    Living in downtown Denver is L O U D. Sirens, base, screaming... decorate our evenings... and mornings. Normally I wouldn't tolerate such exhausting living conditions... but we've already found 6 killer restaurants WITHIN SINGLE BLOCK OF OUR LOFT. ALL WITH DRINK MENUS. AND HAPPY HOURS. HAPPY HOURS ARE JUST SO HAPPY.

    Yesterday I had an avocado piña colada with bubble pearls and some soup dumplings - soup dumplings filled with a delectible french onion Gruyère soup. TO DIE FOR. It was 9 pm on a Friday night, and it was still happy hour. No shit, 9pm on a Friday night is still happy hour in LoDo.

    A nice texture

    So our kitten (who honestly, is no longer a kitten) just made that creepy "baby sound" yowl cats are somehow capable of. And since she's not vocal to begin with, it's even creepier...

    David and I come to peek at her to make sure she's not dieing, and we find her doing the vomit hump in the middle of the hallway - where she proceeds to hack up two, two, rubber bands.

    Special needs little lady, special needs.

    Sitting in Snow

    So were spending our second night in Nebraska. Wasn't our plan, but a wee snow storm has made I80 troublesome. So we gave up around Grand Island.

    We were sitting down to breakfast when it started snowing outside. With coffees in hand we listed to the surrounding conversations. One: most people were lamenting having to start their Christmas shopping. Two: nobody was mentioning the weather.

    It's good to be back.

    MyHong's Pumpkin Pie

    1 8oz pkg cream cheese
    2 cups canned pumpkin - mashed
    1 cup sugar
    1 egg + 2 yolks - slightly beaten
    1cup half and half
    1/2 stick of butter
    vanilla
    cinnamon
    ginger
    1 pre-made graham-cracker crust
    whip cream

    Beat cream cheese. Add pumpkin - beat. Add sugar and salt. Add eggs, half and half, and butter. Add everything else. Pour - Bake - 50min
